TL’s All Natural Seasonings
Apple juice (for basting, optional)
Instructions
Prepare the Chicken:
Spatchcock the chicken by placing it breast-side down and removing the backbone using kitchen shears. Flip the chicken over and press firmly on the breastbone until flattened.Season and Inject:
Pour Tracy Lawrence’s All Natural Marinade into a separate bowl or cup. Using the included injector, inject the marinade throughout the chicken for maximum flavor distribution. Season generously with TL’s All Natural Seasonings.
TL Tip: Tracy likes to inject approximately 3 times into each breast and 1–2 times into each leg.Cook:
Preheat smoker to your desired temperature (typically 250–275°F). Place the chicken on a wire rack and smoke until the internal temperature reaches 165°F at the thickest part of the breast.
TL Tip: Tracy likes to lightly spray the chicken with apple juice throughout the cook to help keep the skin moist and enhance color.Rest and Serve:
Remove the chicken from the smoker and allow it to rest for several minutes before slicing. Serve warm.
